I have a friend from Osaka, and he says he likes Hiroshima Okonomiyaki more than the Osaka version.

There are several foods in Japan that people love, and one of them is definitely Okonomiyaki.

Okonomiyaki is a kind of pancake. There are two main kinds: Osaka style and Hiroshima style. Hiroshima style is often referred to as Hiroshima-yaki.

There are several differences, and a defining feature of Hiroshima-style is the inclusion of yakisoba noodles (sometimes udon).

These are cooked separately and then layered on top of the vegetables.

Anyway, even though Japan is a small country, each region was governed by different Daimyo (lords) until 1868.

Each domain, called ‘Han,’ developed its own culture. That is why food is different from region to region.

Tokyo, Kyoto, and Osaka are so crowded these days, but you might consider small cities that tourists rarely visit.

You will find different food there. And culture.
